Break off a small piece and simmer it with your chai for a few minutes, then take it out. A piece of about 2 inches (5 cm) is a good start for 1–2 cups; adjust to taste. Also for coffee, kheer, pulao and baking.
How can I tell Ceylon from cassia?
Look at the end of the stick. Ceylon has many thin, papery layers rolled one inside the other, like a cigar; it is light tan and smooth. Cassia is one thick, hard layer curled into a hollow tube, reddish-dark brown and rough. FSSAI's guidance note on cinnamon and cassia describes the same test.
Why sticks and not powder?
Once ground, Ceylon and cassia look the same. Whole sticks let you check what you bought. Grind at home if you need powder.
